Lemon zested mandazi

Minutes to Prepare: 45

Minutes to Cook: 30

Number of Servings: 24

 Ingredients:

2 cups warm water

2 tsp Menendazi Baking Powder
4 cups all-purpose flour
One-half cup sugar
2 tbs Top Fry Oil
1/4 cup warm milk (optional)
1 egg, lightly beaten (optional)
Pinch of salt
Top Fry Oil for deep frying
1 Lemon
A sprinkle of icing sugar

All ingredients should be room temperature

 

DIRECTIONS

Take a mixing bowl and combine the flour, Menendazi Baking Powder, sugar, and grated lemon zest. Add the yeast.

Mix the water, Top Fry, milk, and egg together. Gradually add this mixture to the flour mixture whilst kneading into dough. (If not using milk and egg use additional water as necessary.)

Knead the dough until it becomes smooth and elastic (approximately 15 to 20 minutes). Let the dough rest for several minutes.

Divide the dough into several pieces. Roll the dough until it is about 1/2 inch thick. Cut the dough into the shape you want. (Triangles, half circles and rectangles are popular choices.)

Heat a few cups of Top Fry to 300°C in a deep pot. Fry the dough in the hot oil, turning a few times, until they are golden brown all over. Fry only as many together as can float in the oil without touching one another. Place on paper towels to drain. Sprinkle a little icing sugar over them for an added touch of sweetness. Serve warm with a slice of lemon on the side for presentation. 

 There is nothing quite as delicious as a lemon zested warm Mandazi!
